Chef Andrew Ruehmer Brings World-Class Dining to Stackner Cabaret

When Milwaukee Rep audiences return to the Stackner Cabaret this season, they'll be treated to world-class dishes by new executive chef Andrew Ruehmer.

Before arriving in Milwaukee, Chef Ruehmer held positions at top restaurants in Aspen, Cincinnati and cities across the US. Throughout his career, he has worked on A-list projects like the HBO Comedy Festival, The Winter X Games, Aspen Food and Wine and Top Chef.

Chef Ruehmer's love of food began at an early age. While visiting New Orleans as a teen, he first learned to make Bananas Foster from a cousin who was the sous chef at the famed Brennen's Restaurant, named one of the "Best Restaurants in the World" by Condé Nast's Traveler.

"Bananas foster was their famous dish. How could you go wrong there, learning how that was made," Chef Ruehmer said. "Seeing that kitchen was eye-opening."

Chef Ruehmer's vast culinary repertoire -- from comfort food favorites to elegant five star dishes -- has led to a revamped menu that features the best quality ingredients, made to order.

"There are new, interesting things like gnocchi with pancetta, made from scratch in-house. A very comfort-rich shrimp and grits," Chef Ruehmer said. "There are classic favorites like a rich pot roast and vegetarian options too. We're here to satisfy."

"We're using the best product, like Amish Chicken which is raised better and treated better. It's a very clean sourced product."

For patrons enjoying a show in the Stackner or guests just looking for a great dining experience, Chef Ruehmer is excited to deliver.

"I'm very conscientious of people's time and for people to give it to us, that's significant. I want everybody to have a positive dining experience and I'm thrilled to provide the best service during their visit."
